This is the Masuno Sushi Museum in Toryama, the sushi capital of Japan. First, bamboo leaves are placed in a circular wooden container called Wapa. Next, vinegared rice is pressed inside. This is osuushi. Look at how much salmon they put in one portion. And this is a small portion. The cherry salmon or trout is pressed down. The bamboo leaves are folded and a lid is pressed down with weights. This contraption shuts the lid to wooden sticks are placed on the top and bottom.
