27-year-old onigiri beauty goes to Tokyo!
that’s rice. Today we will make 130 pieces of rice balls. Good, I’ll make 130 pieces today! I wonder if I can sell today… I will do my best!
I won’t waste your thoughts. I wanted to meet you! My kids watched YouTube… I can’t sell any more… I’m really going to do this store. I was reminded that it’s not easy. I felt that it must be sold because of his personality. And unexpected encounters. Young people’s ideas. If you make the world a better place. I think that’s interesting, don’t you? Oh man, I’m going to cry… A close look at the tearful Tokyo struggles of an onigiri beauty! Ms. Kaho Higashi, 27, owner of “that’s rice” came to the restaurant at 5:00 in the morning. Higashi-san is based in Hiroshima and sells rice balls in a rear car. This time he came to Tokyo on a 7-city tour throughout Japan. Rents the kitchen of a bar in Ginza to prepare the food. Rear car made for the tour is also brought from Hiroshima. Relatives are also participating in the tour as staff. They put on aprons and start getting ready. This is the second day of sales in Tokyo. (Owner) It was a little difficult in the kitchen, which I’m not familiar with. I think it’s faster today because I know how to do it better. Onigiri making starts. Koshihikari” brought from Hiroshima. (Staff) How many meals will you make today? (Owner) We will make 130 today. Allow water to permeate rice. Prepare salmon to be ingredients for rice balls. (Owner) This is also brought from Hiroshima. Bring it while keeping it cool. (Staff) Is this salmon what you always use? (Owner) Yes, I wanted to do it without changing it this time. Preparation of jako leeks. Preparation of dashimaki tamago (rolled egg). Milk. Dashi. Dashi-maki-tamago is completed. (Staff) How many days will the tour be in total? (Owner) Nearly two weeks. With a rear car in the car. Two weeks worth of luggage. About 13 hours of driving for the staff. And of course, things that can’t be saved. Some foodstuffs are difficult to preserve. Some of them I buy along the way. You’ve almost got it. We were supposed to be in Tokyo, Sendai, Hokkaido, and Nagoya. I was planning to go to Tokyo, Sendai, Hokkaido, and Nagoya. I can’t rent a kitchen in Hokkaido anymore. I was going to be in Sendai for one day, but I went for two days. There is a possibility that we may go straight to Kansai again. I’m going to change my schedule. I’m a little disappointed that I couldn’t go to Hokkaido. It’s a long trip, no doubt, either way. Dashi-maki-tamago (rolled egg) is ready. Cut omelet. Cooking rice. Rice oil. (Staff) How many cups are you cooking today? I cook 70 cups to make 130 meals. He received a knife with his name on it from a customer yesterday. (Owner) I’m using it for the first time! Cutting green onions with a knife given by a customer. (Owner) Oh no! It feels too good! It’s so sharp! Add to sauteed jako. Sesame oil. Sesame. Salmon baked. Bones are removed by hand. This is a patient process, but it is done carefully one by one. More salmon is baked. Make dashimaki mentaiko mentaiko mayo. Mayonnaise. Food gift from customer on Tokyo 1st day. (Owner) The place where I like to store! I get energy from customers who support me. Live-streaming of onigiri making. Getting dressed up and ready for live-streaming. Start live streaming. Announcement of where they will be selling today. Higashi-san visited Tokyo for the first time in February 2025 at the age of 27. This is my second time. And I don’t know where to find a place to sell it. Hiroshima had a limited number of cities, but Tokyo is a city wherever you go. (Staff) (The place where we sell today) is Ginza, right? (Owner) We decided to sell at the Kabuki-za. Many customers come to the store after watching the live streaming. More than 100 people came to watch the streaming right after it started. (Owner) 107 people came to watch. I’ve just cooked rice in the right place. I’m going to wash my hands, now. I’m going to take out the cooked rice. Support comes from overseas. Salmon rice ball making starts. Placing a lot of salmon on top. Plenty of salmon, so much so that it sticks out! (Owner) Thanks 269 people! (Owner) You’re coming from Gunma again! Thank you! Take it easy. Don’t push yourself too hard. I will do my best.I won’t let your thoughts go to waste. A shopkeeper expresses his gratitude to his customers while making rice balls. (Shopkeeper) I’m so happy. I’m so glad to hear that it was so good that you can’t eat anything else. Thank you for saying that. Salmon rice balls are ready in no time. Next rice is cooked. (Shopkeeper) Ah!Good cooking! (Owner) “If we finish today, we will be in Sendai in two days. Yes, yes.I’m going to Sendai, everyone! (Staff) How has the tour been so far? (Owner) All the good ones. My rear car broke down in Fukuoka, too. The kitchen person I rented it from was good at repairing it and fixed it. I finally met a person from outside of the prefecture who always supports me. I met with a customer who I have been wanting to meet for a long time. I had an amazing good meeting, all of them. I’m just looking forward to it because it’s probably going to be there today. It was so good!”…………. (Owner) Thank you so much, I’m glad! 56 salmon rice balls are completed. (Shopkeeper) One step done. Breakfast is served. Breakfast is miso soup with natto. He cared about the aroma of natto. A little rest and one more effort! Finished rice balls are put into cardboard boxes. Then make dashimaki mentaiko onigiri. Put carefully made dashimaki egg on top. Mentaiko mayo. 2 dashi maki tamago (rolled egg) with plenty of mentaiko (cod roe)! (Staff) Do they have any other ingredients than this in Hiroshima? (Owner) About 4 more kinds. I’m doing a cereal version with the same ingredients. If you count that as a type, there are about 16 types. Salmon and dashimaki mentaiko are the standard. that’s rice special rice balls will be jako negi and garlic rice. Either one of those, the one with the stronger feelings, will be sold on the tour. They gave up on oily food such as shrimp tempura because they had to rent a kitchen. I really wish they would eat it, though. I wish you could come to Hiroshima and eat it. Dashimaki mentaiko rice ball is ready. 86 rice balls are completed. (Shopkeeper) When rice is cooked. Finish preparing rice balls with jako negi onigiri at once. I wonder if I can sell today… (Shopkeeper) It’s almost time for everyone to end the live feed. Thanks again for coming in today. Live feed ends. The bar rented us the kitchen. Limited stickers for the store. Sticker drawn and made by the store owner himself. The bar owner was a customer who used to buy onigiri from me in Hiroshima. Preparation of jako negi onigiri starts. (Owner) If it can be done at 10:15, it will be done in time. Put in prepared jako negi (Japanese leeks). Check the taste. Seems to be satisfactorily done. Jako negi is that’s rice special. The person who came yesterday bought 3 kinds. Many people said they liked jako-negi this time. I am glad to hear your compliments on my special rice balls. (Staff) Did you invent it yourself? (Owner) I came up with it while checking with my parents. Mr. Higashi’s parents owned a restaurant. My parents on taste, as they are more strict than I am. What a surprise, we got three kinds of rice balls! I’m so happy! Delicious! I bought it when I was in Hiroshima. I bought it when I went to Hiroshima. I was able to call on them. It’s big, and it’s good to eat. It seems to be special.

(Staff) Are you about to leave? (Owner) Yes, we are.We will assemble the rear car and carry the luggage. Assemble just the foundation. Lower the rear car manually to the third floor. The bar helped. After unloading the rear car foundation, I dashed to get the parts. Assembling the rear car. (Owner) This was built by my grandfather. He’s a carpenter, so he made it (in) less than two weeks. His name is “keiji No. 2. Hiroshima’s is “Keiji No.1”. Rear car is named after my grandfather. Assembly of rear car “keiji No.2” is completed! Staff joins the team. Dash to 3rd floor to get rice balls. Putting in a large amount of refrigerant for quality control. Rear car weighs about 50 kg, and about 70-80 kg when refrigerant and diapers are added. We met quite a bit yesterday, and it was like, “Oh, it was that guy, wasn’t it? I’ve had a lot of people say, “I couldn’t make it yesterday, so I’ll come today.” I’m looking forward to it! Moving toward Kabuki-za. After the national tour, the store owner ends rear car sales in Hiroshima for the last time. I’m a little sad because I have a lot of memories. (Staff) When the tour is over? I always wanted to have a store (store). Put on recognition with a rear car. When I go back to Hiroshima. I’m going to prepare for the opening of my business. I would like to open by winter. Arrived near Kabuki-za. (Owner) Oh!Hello! A customer called out to me before I arrived at the Kabuki-za. Arriving near the Kabuki-za theater. Sales start. The first customer today buys salmon and dashimaki mentaiko. (Shopkeeper) Thank you very much! It’s so filling! One photo to commemorate the event. A visitor from Chiba. Purchased salmon and dashimaki mentaiko today. I found out after I went to Hiroshima last year and decided to go there today for sure. I had something else to do today, but I cancelled it and came here to buy. In no time at all, there was a queue. Customers who had approached me before my arrival arrived. He bought all kinds. A customer who found out about us through a YouTube video and became a fan. (Staff) How was it?After meeting them in person. The delivery is a little bit of a joke. Polite. The owner bows deeply in support. The owner politely serves the customers who come one after another. Many customers come after seeing the delivery. This customer buys 2 salmon and 1 jako negi. A customer offers a drink. (Owner) I get cold drinks and snacks from customers. It’s like “sugar rush.” It’s very gentle. I’ve been wanting to eat it ever since I saw it on YouTube. Bought all 3 kinds. A customer who found out about it on YouTube and visited. He was very friendly and well spoken and made me very happy. Buy all three kinds. Eat a rice ball because I have to work today. I’m thinking of doing my best to be healthy. Many overseas customers came after seeing the delivery. Customers who came to the store yesterday. Raving about jako negi (Japanese leeks)! Purchased a whopping 13 pieces for myself and family! He found out Higashi-san from Udon-soba’s YouTube. I started my own restaurant when I was about Higashi-san’s age. I came here yesterday, but my family wanted to eat there. I came here today for a snack. (I bought) a dozen or so. Jako negi (Japanese leeks) They are so delicious. I bought three of them yesterday, for myself.I was a little short. After that, the number of customers continues to increase, and the rice balls keep selling. I wanted to meet you so badly! This sister here bought 7 pieces! A customer who got to know Higashi-san through the video of Udon-Soba. I’ve always wanted to meet him. I was really looking forward to seeing you yesterday and today (in Tokyo). He is so much nicer than he looks in the video. I bought about 7 of them. I was going to eat them with my family. I’m looking forward to it, I can’t wait to eat it. A customer came to buy at the request of her child. He’s a 10-year-old, a 9-year-old, and a 4-year-old, all boys. This customer also purchased a large amount! How many grams of rice is this? Rice is about 120 grams, and 150-160 grams if you include the ingredients. (Staff) Did you know this before? My son saw it on YouTube. He said it looks so delicious with a lot of ingredients. He bought 10 pieces today! Not only because of the taste, but also because of the polite customer service. I felt that the personality of the people is also what makes it sell.

(If I have a chance to go (to Hiroshima) and if there is a store, I would like to eat there again. Onigiri sold steadily from the start of 12:30 sales. (Staff) How did you come to sell in the rear car? There was an old man in Fukuoka who sold warabimochi, in a rear car. That’s when I thought it sounded interesting. Hiroshima didn’t have anything interesting like that at all. It seems that young people are leaving at the highest rate. So I thought I’d like to do this. I was thinking of selling warabi-mochi at that time. But I couldn’t get permission from the health department. Packaged. I was told that what’s not cooked is okay. I thought, “Onigiri!”I thought. Check the remaining number of pieces. 16 remaining, 114 sold in the first hour and a half! However, after that, no more customers came… (Owner) We started preparing (for rear car sales) in January 2024 and opened in March. (We opened two months after (starting preparations). We couldn’t sell any more… I realized that it’s not easy to run this store. Just having fun. I really felt like I shouldn’t do it just to get started. I reflected on that. Yell from people watching the delivery. A customer comes to the store after watching the delivery. (Owner) I kept going and the number kept going up and up. We started selling almost 200 in Hiroshima. He said, “I’m glad I did it right. I feel like I can finally think now. A customer gave me some food. A customer who came to buy in the morning came back again after seeing the delivery. Well, good luck with the rest! A customer happened to pass by and called out to me. He bought two rice balls. A customer happened to pass by and bought a rice ball. Because my sister was running an interesting business. Because I’m a businessman too. I was just curious to see what kind of business you’re in. I have a beautiful rice field right in front of my farm. I love rice, so I’m just trying to support it. I love rice, so I’m going to support it. It sounds like you’re working hard to take the next step. Isn’t that interesting? There’s a purpose beyond that. I think that’s what they’re doing. New, young people’s ideas. If we make the world a better place. I think that’s interesting, don’t you? (Shopkeeper) We’re almost there… (Shopkeeper) I can keep the temperature at 17 degrees Celsius, and it’s fine from a preservation standpoint. The thermometer in the rear car is 17 degrees. Between 15 and 25 degrees is the proper temperature. The coolant is all properly solidified today. Checking (they are selling). A regular customer buys all the rest, to his surprise. The customer who gave me the knives and bought the last of them yesterday. What a surprise, he was visiting from Hiroshima by Shinkansen. (Shopkeeper) We are sold out.Thank you very much! 13:06.
130 sold out. Oh no, I’m going to cry… Thank you very much. Thank you for all your support. Thank you. I will do my best. You all helped me.Thank you very much. Thanks for your support.I will do my best. Thank you… I can’t stop crying… One woman called out to me. She seems to have visited to buy onigiri (rice balls). What a woman peddling. She was watching my delivery as a colleague. I’m a senior peddler. (Shopkeeper) I’m glad! The voice that says I’m a peddler! Like, I’m always working hard, so I’m going to work hard too. I’m really happy. I am glad that there are women who are peddling. Selling in Tokyo has brought me unexpected encounters. Back to the kitchen. Arrive in front of kitchen. Thanks again to the viewers of the live feed. Many comments of support were received. Rear car dismantled without a break. Dismantling completed. Staff loads the car. (Staff) How was your two days in Tokyo again? (Owner) All the prefectures I’ve been to, it was a good trip. It was another great, great trip. For those who supported me from out of state. I wanted to say thank you in person. I was able to meet with that person quite a bit this time. I am satisfied! (Staff) You were very impressed at the end. I’m a regular visitor to Hiroshima. He’s the kind of person who says, “Thank you, and poof, I’m gone. I really thought I should take good care of him. There were quite a few people who bought it in passing. Day 1 Some people came back because it was so good. Some people said, “I’m going to support you from now on.” I’m glad to hear that. I’m glad I went. I hope you enjoyed the food. I hope to see you again. I asked him again about his future goals. First, a store, hopefully soon. Do your best to make it in time for winter. I want to open an onigiri (rice ball) shop, which I have never opened before. And I’m also putting together episodes of everything I’ve been through. I’m hoping to make it into a book…
I’m writing it now. I met a peddler today. I wish more people would read that and think, “Let’s do it. (Staff) (About the book) Do you have any specific plans? I’m thinking about when the store will be ready. I want to write it down properly. I’m worried that there are too many things to write about, but I’ll do my best. Packing up and getting ready to leave the store. 13:54.
Second day in Tokyo ends. The owner keeps smiling from the start of business to the end. Thank you very much! Pushing forward, Higashi-san’s challenge continues.

  6. 出汁巻き作るなら、黄身と卵白は別にして撹拌してから混ぜる方が美味しくなりますよ。
    特に卵白は、ミキサー使って泡立てて混ぜるとハッキリします。

  7. How I wish I can try and taste your products, they all look good. I am from the Philippines and I rarely eat Japanese in my town. If I ever go to Japan, I will look you up so I can try and taste your products. Keep up the good work. Arigatou gozaimasu.
