あの大阪最強町中華の元従業員たちが圧倒的な熟練スキルで新店に挑んだ結果・・・丨Egg Fried Rice – Wok Skills In Japan
A look at a new take on Chinese cuisine, carrying on the flavors of the renowned Chinese restaurant “Juhachiban.” Delicious! Osaka, Japan Opening in 2023
Chinese Bistro Kagari Owner: Mr. Yamamoto (48 years old) 8:00
Start preparation Preparing homemade chili oil Five 8-go (approx. 1.4 liters) rice meals for lunch alone I have Uber Eats for dinner, so Cooking a little extra rice Staff) Are you someone who can crack eggs really fast? A long time ago. Chicken thighs Cutting them for fried chicken and yakitori (deep-fried chicken with sweet and sour sauce) Mr. Ito’s lightning-fast egg cracking skills are still alive and well. I learned that skill at my previous restaurant. Staff member: What inspired you to start your own restaurant? Well, the story goes, I used to work there. I’m sure you know this, but… Two years ago, a restaurant called “Juhachiban” closed. Exactly two and a half years ago,
it was closing down. Well, I lost my job. When I was wondering what to do I’d been doing it for over 20 years, so I was doing Chinese food, so I thought, why not open my own restaurant instead? Staff member: Why did you close it? The reason is a people issue. The employees who worked there were getting older. Thankfully,
the store was busy. I gradually found it hard to keep up.
Everyone was getting older. If it was going to cause trouble for customers, They’re thinking about closing it down. The previous owner No, it’s a store like that now. It’s just not worth it. Plus, prices are skyrocketing right now. The previous store was cheap. It was like a typical popular restaurant. Fried rice was 300 yen. A half-portion ramen was 400 yen. That hasn’t changed at all. It’s the ultimate low-margin, high-volume store. Really?
But on the flip side, we had a lot of customers a day. At its peak, I think we’d have as many as 1,000 people. I couldn’t run a restaurant like that. Well, if I had to choose, The price is somewhere between a local Chinese restaurant and a high-end Chinese restaurant like you’d find in a hotel. I’m also aiming for quality in the food. But as I gradually built the store, it became a bit more sophisticated. I thought it might be a little intimidating for customers at first. I wish I’d made it more appealing to the masses. It was the beginning, so there were a lot of things I didn’t understand. I often think, “I should have done it this way.” It’s a popular customer favorite, and I think even regulars come back. “Do they have half-spicy ramen?” No, they don’t. Preparing almond tofu Staff member: Are there any items you continue to serve from your previous restaurant? Yes, we do. Stamina fried rice, for example. Well, the main dish was a popular one, a specialty. Staff) What’s the most popular dish at your restaurant? Mapo tofu, eh? Also, do they serve a lot of dandan noodles? Staff member) What did your specialty mean to you, Mr. Yamamoto? It was a family business for me. My grandfather ran it first, and my parents took it over. It was always nearby. I don’t know if it’s special or not.
It’s more like it’s part of everyday life. It’s always been there. Staff member) Kagari-san, the proprietress,
is going to be your mother, right? That’s right. Staff) Was the landlady’s presence really that important to Juhachiban? Hugely significant. She was like the boss of everyone. Everyone would consult her if something happened. I think she was really important. 9:15 Preparing meat miso Shredding potatoes Staff member) Why did you use Kagari-san’s (Juhachiban’s owner) name for the restaurant? Honestly, it’s not like that. I was really struggling to decide on a name. There were a lot of things going on, but In the end, nothing was decided. If I had done that, I would have been working at my previous job. All of the current employees were working in their specialty. I’m already grateful to everyone who has helped me. I thought that was fine. Seasoning chicken for fried chicken and yakitori (deep-fried chicken with sweet and sour sauce) Preparing braised pork with black vinegar Parboiling shredded potatoes Staff) I found a picture of “JoJo’s Bizarre Adventure” Staff) The same goes for the T-shirts.
Who drew the illustrations? I actually commissioned someone to draw that for me. Fry the fried chicken once and then again before serving, so it’s a double fry. Make a plate out of spring roll wrappers. Prepare mapo tofu.
Garlic, ginger, chili bean paste, black fermented black beans, etc. Our specialty, Narita-style Sichuan Mapo Tofu, was
a menu item created by our staff member, Mr. Narita. I didn’t come up with it alone, though. Together with the owner. It’s quite difficult. It’s simple, but there are many things you can do to make it look good. Even if you add it, if you do it properly,
it’s comparatively unmatched compared to other products. It tastes better.
There are many parts. A little makes a big difference. You have to have a clear idea of what the strike zone is. The owner’s wife is working. Opens at 11:30 AM Sour Chicken Set Meal: ¥1,120
