Eye of the Rib from Tajima Beef grilled in Osaka.
This was part of our visit to Tajimaya in Shinsaibashi.
The cut shown here is about 150g and highlights the center section of the Ribeye. Tajima beef is known for its clean fat and balanced flavor, and this cut expresses both with a straightforward approach to grilling.
What stood out to us was the grill setup. Thick cast iron plates combined with a smokeless grill create steady heat, allowing precise control over sear and timing without rushing the meat.
Tajimaya focuses exclusively on Tajima beef, and that clarity of sourcing shapes the experience.
