Wagyu Zabuton Yakiniku Don | KITAN IN, Osaka
Hiro-san grills a Zabuton, then lays it over warm rice with a cured egg yolk — the last bite of the meal at Kitan In, Osaka.
It’s the kind of final bite that makes you want to come back before you’ve even left.
Kitan In is Hiro-san’s yakiniku counter in Shinsaibashi, Osaka. He closed our meal with a Yakiniku Don: Zabuton — the cut also known as Denver Steak — grilled in front of us and set over a bowl of rice with cured egg yolk, miso shiru, and house pickles.
The Zabuton is one of the most marbled cuts on the cow. When that fat meets the warm rice and the rich, cured yolk, everything comes together in a single bite. Watching Hiro-san grill it and plate it at the counter is half the experience — you taste it exactly as he intended.
