Wagyu Ichibo vs Kata Rosu 🥩 Osaka 25 Year Course
25 years of Wagyu at Nikusho Nakata in Osaka.
This is part 6 of their anniversary course.
Two cuts were presented side by side. Ichibo and Kata Rosu.
Ichibo, also known as Picanha, comes from the rear of the animal near the rump.
Kata Rosu, or Chuck Roll, comes from the front, closer to the neck.
Each cut was sliced thinly and grilled with care, allowing the differences in texture and flavor to come through clearly.
Moments like this show how different parts of the animal can offer completely different expressions, even within the same course.
