Rare Tokushima Wagyu – Teppanyaki in Kyoto

A visit to the restaurant “Fresh Market” in Kyoto, Japan, to have Wagyu Sirloin steak, aged for 30 days of a 11 year old cow from Tokushima.

  3. 205 grams Wagyu beef which I can purchase for about $11 USD in Tokushima, where I own a home. I don’t know what it cost in tourist overrun Kyoto (I’m there a lot) but probably quite a bit.

  4. There's a certain amount of disdain this chef has for his process. He's to Teppanyaki what Dr. House is to medicine.
