TWENTY TO THIRTY SECONDS A SLICE

A Miyazaki Gyu Rump at Kitan In, Osaka — Hiro-san portions each slice to the same thickness, then grills it on the yakiniku grill for just 20 to 30 seconds.

The course runs through many different dishes, and it ends with a section that is Kitan’s own interpretation of yakiniku. Usually, yakiniku is grilled by the guests. Here, you simply enjoy the meal — Hiro-san and his team grill every cut to their recommended temperature.
